wild garlic pesto
Quick and easy pesto - livens up every meal - and so much better than shop bought!
Large bunch of wild garlic (about 100g) or a mix with spinach*
50g parmesan
50g walnuts
extra virgin olive oil
Blitz all the ingredients in a food processor, add oil through the top as you go, till you have the consistency you like. I usually chop my parmesan and wild garlic roughly first to help it along in the processor.
*you can use any leafy greens or herbs - or nuts - to make your own favourite version. Measurements are approximate to give you roughly the ratio you need, but adapt up or down.
