NUTTY SAVOURY GRANOLA
A fragrant and warming granola, full of crunch with protein, healthy fats and fibre - a great start to the day or a savoury snack or sprinkle for salads
100 mixed nuts, 150g jumbo oats, 1/2 tsp chilli flakes, 1tsp nigella seeds, 1tsp fennel seeds, 3tbs aquafaba, 2tbs tahini, 1tbs maple syrup, 2tsp soy sauce
Roughly chop the nuts. Heat the oven to 180 and line a large, flat baking tray.
Mix everything in a bowl till really well combined. Spread the mixture over the tray and bake for 20-25 minutes till golden brown. Allow to cool, then store in an airtight jar - should keep several weeks.
