NUTTY SEEDY CHOC BARS

Everyone loves these - a super-healthy treat, ideal for a snack or served after dinner with fruit for a delicious ready-made dessert

60g coconut oil, 1tsp vanilla extract, 40g sunflower seeds, 40g pumpkin seeds, 40g almonds, 40g Brazil nuts, 75g cashews, 50g desiccated coconut, 150g dark chocolate (min 70% cocoa)

Melt oil in a pan on a low heat. Add vanilla. Pulse seeds and nuts in processor till finely chopped but not ground. Add to oil mixture with desiccated coconut, stir well.

Melt chocolate in a small bowl over pan of hot water and stir into the mix till fully combined, press mix into a lined 20 x 20cm tin and place in fridge or freezer to set. Cut into small squares (these will be uneven, but all the better for it). Keep really well in fridge or freezer (I use mine from a bag in the freezer - no need to defrost).
