FLAXSEED BUNS
Not the prettiest but definitely the tastiest sandwich buns! Full of fibre and perfect quick and easy lunch solution with your favourite filling.
150g ground flaxseed, 1tsp bicarbonate of soda, 1/2 tsp sea salt, pinch of black pepper, 3 eggs, 2tbs apple cider vinegar, 3tbs melted coconut oil, 1tbs sesame seeds
Mix the dry ingredients in a bowl with a fork. Whisk is in remaining ingredients and leave to rest for 20 minutes to thicken up.
Meantime, preheat your oven to 180 and line a large baking sheet with paper.
Take a generous tablespoonful of batter and place on the sheet, using a fork to gently shape and pat down into a flat-ish round about 1cm thick (the batter will make 6 buns).
Bake for 20 minutes until the buns are just firm but springy, and cool on a wire rack. Slice and fill, or store in the freezer.
