crunchy green slaw

Super-healthy summery slaw with flax bun salmon sandwich - bursting with omega 3 fats, gut-healthy probiotics and anti-inflammtories. A perfectly delicious lunch.

1/2 pointed cabbage, shredded, 4 chopped spring onions/1/2 red onion, 2 gundillas choppped jalapenos/1 fresh green chilli, 1 1/2 sliced apples, large handful of mint, and dill

Dressing: 2tbs Greek yoghurt, juice of 2 limes, 1 rounded tsp sea salt

Place slaw ingredients in a bowl, whisk up the dressing and pour over, toss to coat.

TIP the flax bun recipe is on my blog/recipe page. They are a brilliant alternative to ‘bread’ as they are light and delicious, full of fibre and protein. Wonderful for balancing hormones and healthy digestion. They are very easy to make and freeze well.

Eat as above with smoked salmon and a spread of hummus or butter.
